People say there isn’t anything quite like a good beer. Those people, who are not wrong, are in fact missing the mark, there isn’t anything quite as satisfying as good beer paired with good food. That’s the premise behind the Track 7 Brewing Company mashup with The Salted Pig. When good food and good beer come together, it’s just perfect.
When presented with the concept of beer paired with food, most people tend to focus on the end result. Which, while delicious, is only half the story. I like to think that collaboration is the recipe for success.
Let’s talk local
Michael Traylor, chef de cuisine, is a native of Riverside. He graduated from the RCC Culinary Academy under Head Chef Larry Thai. A perfect apprenticeship for those looking to learn while being challenged. Traylor will be the first to tell you that this isn’t his first menu inspired by beer. He’s contributed plenty to The Salted Pig’s beer dinners. He’s known for his delectable creations.
While Track 7 Brewing isn’t quite local, they do have a ringer. Head brewer, Ryan Graham, is from the Inland Empire and a UCR graduate. While he is also one of the owners, you could say he’s Track 7’s Flavor Czar. When he’s not working with fermented goods, he’s putting time in with the CCBA and very involved with the craft beer community.
Let’s talk beer
For those gastropub fanatics, I’ve included the tap list below. The beer that stands out to me is Everything Wrong (and Right), an IPA for the hop heads among us. Rumor has it, the brewery is so confident in this IPA, they are going to enter it into the SAVOR competition this year.

Traylor created a menu accentuating the flavor profile of each beer paired. Cornbread served with plantain dip, house butter, and honey is said to pair nicely with Bee Line Blonde. If your drinking the Blood Transfusion, try the Red Snapper with sweet potato puree and fennel citrus salad. If breakfast for dinner is your thing; you’ll enjoy the Bacon & Eggs with maple braised pork belly, smoked grits, poached egg and pairs with the aforementioned Everything Wrong (and Right) IPA.
